MANGO QUINOA OVERNIGHT PANCAKES by @cookingforgrey
-Flesh of 1 mango
-1 very ripe banana
You can blend those too but I find that the lumpier the batter – the better the pancake!
-2 eggs or 2 flax eggs (2 TBSP ground flax seeds plus 6 TBSP of water blended to egg consistency = 2 eggs)
Mix in until just combined:
-3/4 cup oat flour (or quick or rolled oats ground in the blender)
-1/4 cup quinoa flour (=nice protein boost)
The batter will be thick and lumpy. Drop with a teaspoon into well-preheated coconut oil. Cook on one side until you see bubbles and then half the time on the 2nd side. We served with fresh berries and mango and raspberry nice cream swirls for my teething little man (blend fresh+frozen mango, blend fresh+frozen raspberries, swirl together, top with coconut flakes if you like).
