Banana Cranberry Cake
Ingredients

285g/10oz plain flour

1 tsp baking soda

½ tsp salt
-
110g/4oz butter, plus extra for greasing the bowls (grease well)

225g/8oz sugar in the raw

2 free-range eggs
-
4 ripe bananas, mashed

85ml/3fl oz milk mixed with1½ tsp apple cider vinegar

1 tsp vanilla extract
Preparation method

Preheat the oven to 180C/350F/Gas 4.

Sift the flour, bicarbonate of soda and salt into a large mixing bowl.

In a separate bowl, cream the butter and sugar together until light and fluffy. Use a fork and just work together for about 5 mins.

Add the eggs, mashed bananas, cranberry sauce, buttermilk and vanilla extract to the butter and sugar mixture and mix well. Fold in the flour mixture.

Grease the oogaa bowls, makes 6 cakes! If you are using the divided plates fill mixture half way and reduce your cooking time to about 15-20mins

Transfer to the oven and bake for about 35mins, or until well-risen and golden-brown.

Remove from silicone bowls or plates after a few minutes, allow to cool on a wire rack before serving.
