Grab and go breakfast oatmeal muffins with some mini chocolate chips! Post by @bebeandbear 😍
Lately I’m all about the grab and go, are you???
This baked oatmeal recipe is soooo versatile. You can add anything you want really but this was kept simple.
.
Baked oatmeal mini chocolate chip muffins:
🔸3 cups of gluten free rolled oats
🔸1 cup of unsweetened oat milk
🔸3 very ripe bananas
🔸1 tbsp of baking powder
🔸1 tsp of pure vanilla extract
🔸pinch of salt
🔸2 eggs
🔸1/2 cup of mini chocolate chips plus more for sprinkling on top .
🔸Preheat oven to 375 F. Mash bananas and combine all ingredients into one bowl. Mix together. Fill muffin liner to the top. Sprinkle more chocolate chips on top. Bake for 25 minutes. Enjoy! Makes 12! .
This is our favorite way to eat oatmeal and it goes down as a treat with the chocolate chips! Dairy free. Gluten free. Sugar free without the chocolate! Naturally sweetened with banana. Kid-friendly! And kid approved! 🙌 They also work well in a lunchbox. .
